- Well, I'm the matriarch of our little clan! I have a wonderful husband that loves me more than I probably deserve. We have three beautiful children - Jack, Holly and Maddi. They are amazing little people that are going to change the world! I am blessed to live in a cozy little neighborhood with folks who are as much a part of our family as anyone. I love to cook and work in the yard - when I'm not pouring sippy cups and changing diapers. The perfect day for me would be Jeff taking to kids to the park while I stayed home and cooked all day, tinkered in the yard and had time to scrub my tub without running interference between Jack and the Soft Scrub. I'm a Democrat - more of the Southern variety than the tree-hugging - and would talk politics all day if you'd let me. Life is extremely hectic but it's good and I am happy!

Recipes I'm Asked For
Brown Rice
If we cook out in the neighborhood, I am not allowed entry unless baring this dish. It's so easy and keeps warm and moist for a good hour after you take it out of the oven - making it a great "covered dish". Since I totally screwed this up last weekend at Lane and Jill's trying to substitute ingredients and cook it in the microwave, I thought I'd post this too.
1 stick of butter
1 large onion, chopped
2 cans beef consume
1 can water
1.5 cans uncooked rice
Melt butter in a large skillet over medium-high heat. Add onions and rice and cook until rice smells "nutty" and has a golden brown color - stirring constantly.
Add rice mixture and liquids to a 2 qt. casserole. Cover and bake at 350 for 1 hour.
*You can absolutely use less butter if you prefer.
Mojitos
This recipe is wicked good and is usually requested by the neighbors any time we get together.
2 cups water
1 1/2 cups sugar
2 cups fresh mint sprigs
1 cup fresh lime juice
2 cups tequila
2 cups tonic or club soda
Combine sugar and water and boil until sugar is completely dissolved. Remove from heat and add mint; let stand until completely cool - about one hour.
In a festive pitcher, combine mint syrup and all other ingredients. Serve over ice with mint or lime garnishes.
Rosemary & Garlic Chicken
I adapted this recipe from a Southern Living recipe for Cornish hens. I made a few changes and omitted the brick - don't ask - and it has fast become a staple at our house any time we're ready to fire up the grill or need to feed the masses.
8-10 lbs bone-in chicken
3 Tbsp kosher salt
3 Tbsp fresh ground pepper
6-8 garlic gloves, minced
4 Tbsp fresh rosemary, chopped fine
1 Tbsp red pepper flakes
1/2 cup lemon juice
1/2 cup olive oil
In a large bowl slowly add olive oil into lemon juice, whisking continually to emulsify. Add dry ingredients to oil mixture. Pour marinade over chicken and let set refrigerated 4 hours or overnight.
Bake chicken uncovered at 325 for 3-4 hours or grill low and slow until done.

Crap that bugs me... damn.
- I hate checking voice mail. Period. The thing that I hate worse than checking it is checking it two and three times because the caller has blown through their phone number so fast that you can't understand what the hell their number is.... damn.
- It should be mandatory that all doctor's office greeting messages START with the number you press to MAKE AN APPOINTMENT. It is ridiculous to have to wait through information about referrals, hours, vaccine hotlines, doctor-to-doctor calls, pharmacies, etc... damn.
- Women catch more germs on bathroom door handles and faucets than toilet seats - so sit on the freaking things and quit pissing all over the seat! There's nothing like plopping down on someone else's cold urine....seriously... damn.
- Stork Parking is nice but sparse. I think OBGYN's should be able to issue temporary handicapped parking permits when their pregnant patients reach thier second trimester that are good for one year... damn.

I am 3 (not really). I like to eat chicken and rice and hamburgers and rice. Holly Francis Rivers is my name. Jack is my brother and he is only one and he is blue. I like to play with Justin at Aunt Junes - we play blocks and toys and sometimes rocks. Lula and Dedee are my puppies and they jump. I like to sing Franklin (theme song from the Noggin show). Ariel is my favorite movie (The Little Mermaid) because I watch it in the van - and give Jack crackers. Maddi sleeps in my room. The end.

My favorite food is pizza - I can eat 4 pieces. I like my mom's meatloaf and Mandy's brown rice and pork chops. My favorite song is Breaking Free by Garbiella and Troy Bolton from High School Musical. My favorite colors are blue, pink & purple. I share a bedroom with my sister Holly - our room is pink with flowers and dresses and we have two white bunk beds but they're not on top of each other right now -we took the beds apart. I play with my friends a lot - especially Olivia. I like to play outside at my Dad's house because I have a lot of friends here. Holly bugs me when she takes my toys from me but I like it when I make her laugh. Jack is soooo cute because he's soft and loud.
